摘要:牛奶制品酸酸乳的生产过程包含了一系列步骤，主要涉及到酸酸乳的调配过程，该调配过程属于一个二次配料的过程。首先，进行复原奶调制、糖液的调制、酸液的调制及胶液的调制；其次，对上述四种调制好的液体进行混合；再次，将混合液在所要求的压力均质，降温处理；最后，根据实际生产需求进行调酸，即根据实际情况补充水、乳酸和柠檬酸等配料，调酸完成之后成品即被封装运到各个地方。

　　　本设计是针对酸酸乳配料过程所做的自动监测系统，涵盖了酸酸乳配料的各个工艺流程。本系统采用工业组态软件进行设计，对该生产过程进行监测，设计过程中运用软件进行运行，运行过程良好，稳定性高。在设计中体现了安全、可靠、优质、经济这些生产基本要求。实现了各监测点的优化管理，提高了生产效率，满足食品生产的指标和发展需要。

ABSTRACT:Milk sour yogurt production process consists of a series of steps, mainly related to acid deployment process, the deployment process belongs to a two batching process. 　　　组态王软件以其可视化的操作界面、较强的灵活性和强大的报警、事件处理和语言处理等显著特点广泛应用于现代工业自动控制中。在组态王软件强大的功能下，我们设计出了酸酸乳生产配料监控系统，该系统达到了预期的效果，也达到了预期的目标。再加上组态王设计的人机界面，整个系统的操作和控制方便，大大提高了系统的自动化程度和实用性。但该监控系统也有一些不足的地方需要改进，这样的话控制效果可能会更好。在这次设计过程中我对组态王软件也有了很大的了解。认识到了组态王的一些应用情况，组态王软件的组成与功能，其应用程序项目如何建立，数据词典如何建立，动画如何进行链接，命令语言程序如何编写，趋势曲线如何建立，还有I/O设备的配置和组态网络的建立等等一系列与组态王软件应用相关的知识。
